APPLICATION OF BOX-WILSON CENTRAL COMPOSITE EXPERIMENTAL DESIGN TO OPTIMIZE THE PROTEOLYTIC ACTIVITY IN MILK BY LACTOCOCCUS LACTIS LCL STRAIN

چکیده

In this work, the individual and interactive effects of temperature pH on proteolytic activity Lactococcus lactis LCL strain in milk were studied by quadratic Response Surface Methodology. The selected variables have been analysed using a Central Composite Design maximum response (proteolysis rate) under optimum values satisfactory fit model was realized. mathematical relationship two significant independent can be approximated nonlinear polynomial model. Predicted found to good agreement with experimental (R2 = 0.937) demonstrating significance result optimization predicted has shown that maximal for proteolysis rate revolved around 43.7 ± 1.4 % at optimal condition (30°C 7).
